Description
Paso a Paso Blanco| Vino de la Tierra de Castilla, Spain
Paso a Paso Blanco is a fresh, easy-going white wine from Bodegas Volver. It combines the soft fruit of Macabeo with the bright, aromatic character of Verdejo.
The vineyards lie near Casas de los Pinos, in the southeast of Cuenca. They sit around 600–700 metres above sea level and experience a dry continental climate. Warm days help the grapes ripen, while cooler nights preserve freshness and acidity. The surrounding pine forests and natural scrub also support low-intervention vineyard work.
The grapes are harvested by hand after the second week of September. Once at the winery, they ferment in temperature-controlled stainless steel tanks. Every stage focuses on keeping the wine crisp, fruity and refreshing.
On the nose, Paso a Paso offers white flowers, ripe orchard fruit and gentle herbal notes. The palate is fresh and balanced, with lively acidity, soft fruit and a slight touch of sweetness that makes it especially easy to enjoy.
This is a versatile white wine for relaxed occasions. Serve it as an aperitif, open it with tapas or pair it with fish, salads and simple Mediterranean dishes.

About the Producer
Bodegas Volver was created by winemaker Rafael Cañizares, whose work focuses on recovering old vineyards and showing the quality of Spain’s native grape varieties. The winery produces wines in several Spanish regions, but each project remains closely linked to its own landscape and local varieties.
For the Paso a Paso range, the team works with vineyards in Castilla planted on poor, sandy soils mixed with stones, chalk and iron-rich material. The dry continental climate and wide differences between daytime and nighttime temperatures help preserve both fruit and acidity. Harvesting is carried out by hand, while careful, gentle winemaking keeps the wines expressive and approachable.
The name Paso a Paso, meaning “step by step,” reflects this careful approach. From vineyard selection to fermentation, every stage is designed to protect the natural character of the grapes and create wines that offer genuine quality without becoming complicated.
