Salto del Usero Fermentado en Barrica | DO Bullas, Spain
Organic
Vegan
Salto del Usero Fermentado en Barrica shows a different side of Macabeo. Instead of focusing only on freshness, this wine adds richness, texture and complexity through fermentation and ageing in French oak barrels. The result is an elegant white that balances ripe fruit, creamy texture and lively acidity.
The grapes come from old bush vines in the Valle del Aceniche, one of the highest parts of DO Bullas. The vineyards sit at around 850 metres above sea level, where warm sunny days and cool mountain nights help the grapes ripen slowly while keeping their natural freshness. The family harvests every bunch by hand and selects only the healthiest fruit before it reaches the winery.
After a short skin maceration, the must ferments in 300-litre new French Allier oak barrels. The wine then undergoes malolactic fermentation and remains in barrel for around 180 days, with regular bâtonnage to build texture and complexity. This careful approach gives the wine a creamy mouthfeel while preserving the vibrant character of Macabeo.
The nose opens with aromas of ripe peach, mango and grapefruit, followed by hints of vanilla, toasted almonds and gentle spice. On the palate, the wine is rich yet fresh, with bright acidity, subtle oak and a long, elegant finish that invites another sip.
Whether paired with seafood, roasted poultry or creamy rice dishes, Salto del Usero Fermentado en Barrica is a superb example of how barrel ageing can add depth without hiding the natural freshness of the fruit.

💎 Why We Love It
Many barrel-aged whites lose their freshness. This one doesn’t. The oak adds texture and complexity, while the Macabeo keeps the wine lively, elegant and unmistakably Mediterranean.
About the Producer
Bodega Monastrell is a family winery run by Alfonso and Mavi, who grew up surrounded by vineyards in Bullas. They created the winery to show what the region can achieve when great vineyards meet careful, sustainable winemaking.
The family farms every vineyard organically and harvests each parcel by hand. They work with old vines in the Valle del Aceniche, where limestone soils and cool nights help the grapes develop freshness and concentration. In the cellar, they use modern techniques only when they improve quality, always aiming to preserve the character of the vineyard.
Salto del Userero Fermentado en Barrica reflects that philosophy perfectly. The wine combines traditional barrel fermentation with the freshness of high-altitude Macabeo, creating a white wine that is elegant, complex and unmistakably Bullas.
