Cullerot | DO Valencia, Spain
Organic
Vegan
Cullerot is one of those white wines that makes you realise just how exciting Valencia can be. Made by Celler del Roure from a fascinating collection of local grape varieties, it is fresh, Mediterranean and wonderfully characterful — but the real magic happens in the cellar.
Rather than relying on oak, Cullerot is aged in traditional clay amphorae, a winemaking method that Celler del Roure has helped bring back to life. Hidden beneath the winery are historic underground cellars containing old clay vessels, some dating back to the 17th century. Winemaker Pablo Calatayud began restoring this almost-forgotten tradition and today it has become one of the signatures of the estate.
The wine brings together Macabeo, Pedro Ximénez, Malvasía, Verdil, Tortosina, Merseguera and other local varieties from organically farmed vineyards. Fermentation starts naturally before the wine spends around six months in clay amphorae. The result isn’t heavy or overly complicated — quite the opposite. It’s beautifully fresh, textured and easy to enjoy, with ripe Mediterranean fruit, citrus, herbs and a lovely mineral character.
Cullerot is a brilliant choice for anyone who wants to step away from the usual Sauvignon Blanc or Chardonnay and discover something genuinely Spanish. Interesting enough for the wine enthusiast, but delicious enough that you don’t need to know anything about amphorae to enjoy it.

💎 Why We Love It
Because Cullerot manages to be different without being difficult. Ancient clay amphorae, organic vineyards and a collection of almost-forgotten Valencian grapes might sound rather serious — but what’s in the glass is simply delicious.
Fresh, textured and full of Mediterranean personality, this is exactly the sort of wine we love introducing people to at La Solera: something you probably wouldn’t pick from a supermarket shelf, but once you’ve tried it, you’ll remember it.
About the Producer
Celler del Roure was founded by Pablo Calatayud in 1995 near Moixent, Valencia. The estate sits on an old Mediterranean farm where vines, olives, almonds and cereals have been cultivated for generations. Beneath the property Pablo discovered an extraordinary historic cellar containing dozens of old clay amphorae.
Rather than treating them simply as part of the winery’s history, he began researching how these traditional vessels had once been used. After years of experimentation and restoration, amphorae became an important part of Celler del Roure’s winemaking again.
Today the winery is particularly known for combining native Valencian grape varieties, organic viticulture and traditional clay-vessel ageing with modern precision. Cullerot is a perfect introduction to that philosophy: a wine rooted firmly in Valencia’s past but made very much for today’s wine drinker.
