Description
Dominio del Pardinal Chardonnay | IGP Tierra de Castilla, Spain
Organic
Dominio del Pardinal is an elegant 100% Chardonnay from the high-altitude vineyards of Dehesa El Carrascal in Albacete. It is fresh and fruity, but four months on its fine lees give it a lovely creamy texture and extra depth.
The Chardonnay comes from organically farmed vineyards at around 900 metres above sea level, at the foot of the Sierra del Mugrón. The soils are stony and silty, while the dry continental climate naturally keeps yields low.
In the glass, expect green apple, pear and ripe white fruit, together with delicate white flowers. The lees ageing adds softness and texture, but there is no oak to dominate the fruit. As a result, the wine feels rounded and silky while remaining fresh.
This is a great Chardonnay for someone who wants a little more body than a simple young white, without moving into a rich, heavily oaked style. It’s polished, easy to enjoy and extremely food-friendly.

About the Producer
Dehesa El Carrascal is a family winery based between Alpera and Bonete in Albacete. The García Cañada family’s winemaking history dates back to 1962, and the estate is now run by the second and third generations.
The vineyards sit high on the slopes of the Sierra del Mugrón, where altitude, low rainfall and large differences between daytime and nighttime temperatures help the grapes retain freshness. The estate has around 300 hectares of its own vineyards, with Garnacha Tintorera playing an especially important role.
Dominio del Pardinal shows another side of the estate. Here the focus is Chardonnay, grown organically at altitude and made without oak. The four months on fine lees give the wine extra texture while allowing the fresh fruit to remain centre stage
